Steak Tacos

Ingredients
  

  • Mexican Seasoning:
  • 1 tablespoon chili powder
  • 2 teaspoon ground cumin
  • 2 teaspoon garlic powder
  • 2 teaspoon onion powder
  • 1 teaspoon chipotle powder
  • 1 teaspoon dried oregano leaves
  • 1 teaspoon kosher salt
  • Chipotle Salsa:
  • 1 (14-ounce) can Fire Roasted Tomatoes
  • ½ cup yellow onion, chopped
  • 2 cloves garlic cloves, minced
  • ½ jalapeño, seeded and minced
  • 2 chipotle peppers in adobo, plus 1 teaspoon of the adobo sauce
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ½ cup cilantro
  • 1 fresh lime, juiced
  • Avocado Crema:
  • 1 ripe avocado
  • 1 garlic clove, peeled and minced
  • ½ cup sour cream
  • ¼ cup fresh cilantro
  • ½ fresh lime, juiced
  • 1 tablespoon olive oil
  • ¼ teaspoon kosher salt, plus more to taste
  • teaspoon crushed red pepper flakes
  • Steak Tacos:
  • 2 pounds beef tenderloin, small dice
  • ¼ cup Mexican seasoning
  • 2 tablespoons neutral oil
  • 1 onion, thinly sliced
  • 6 corn tortillas
  • 2 tablespoons butter or oil
  • 1 cup grated Oaxaca cheese
  • ½ cup chipotle salsa, plus more for serving
  • ½ cup avocado crema, plus more for serving

Instructions
 

  • Seasoning Mix:
  • In a small bowl, combine chili powder, cumin, garlic powder, onion powder, and oregano. Set aside until ready to use.
  • Chipotle Salsa:
  • Combine all of the ingredients in a blender or food processor and pulse until everything is evenly blended. Taste and adjust salt and pepper, as needed. Transfer to a bowl and set aside until ready to use.
  • Avocado Crema:
  • Place all the ingredients in a blender or food processor and pulse until smooth and creamy. Taste and adjust salt, as needed.
  • Steak Tacos:
  • Place diced beef in a large bowl, and sprinkle seasoning mix all over.
  • Heat 2 tablespoons oil in a large pan, over medium-high heat. Add onions and sauté for 6 to 8. Transfer them to a plate, and in the same pan add the beef and cook for 2 minutes. Transfer the beef to a separate plate.
  • Add oil to the same pan over medium-high heat. Add 2 tortillas at a time to the pan, cook for 1 minute and flip. Top them each with cheese, steak, onions, chipotle salsa, and avocado crema. Remove from the pan and repeat the process.
  • Serve the tacos with chipotle salsa and avocado crema on the side. Enjoy!

Notes

Beef can be replaced with chicken breast or thighs.
