Avocado Crema:
1ripe avocado
1garlic clove,peeled and minced
½cupsour cream
¼cupfresh cilantro

⅛teaspooncrushed red pepper flakes
Steak Tacos:
2poundsbeef tenderloin,small dice
¼cupMexican seasoning
2tablespoonsneutral oil
1onion,thinly sliced
6corn tortillas
2tablespoonsbutter or oil
1cupgrated Oaxaca cheese
½cupchipotle salsa,plus more for serving
½cupavocado crema,plus more for serving
Instructions
Seasoning Mix:
In a small bowl, combine chili powder, cumin, garlic powder, onion powder, and oregano. Set aside until ready to use.
Chipotle Salsa:
Combine all of the ingredients in a blender or food processor and pulse until everything is evenly blended. Taste and adjust salt and pepper, as needed. Transfer to a bowl and set aside until ready to use.
Avocado Crema:
Place all the ingredients in a blender or food processor and pulse until smooth and creamy. Taste and adjust salt, as needed.
Steak Tacos:
Place diced beef in a large bowl, and sprinkle seasoning mix all over.
Heat 2 tablespoons oil in a large pan, over medium-high heat. Add onions and sauté for 6 to 8. Transfer them to a plate, and in the same pan add the beef and cook for 2 minutes. Transfer the beef to a separate plate.
Add oil to the same pan over medium-high heat. Add 2 tortillas at a time to the pan, cook for 1 minute and flip. Top them each with cheese, steak, onions, chipotle salsa, and avocado crema. Remove from the pan and repeat the process.
Serve the tacos with chipotle salsa and avocado crema on the side. Enjoy!

Beef can be replaced with chicken breast or thighs.
