Chicken Burgers with Tzaziki
Ingredients
- Chicken Burgers:
- 1 tablespoon extra virgin olive oil
- ½ cup finely diced onion
- 1 large garlic clove, minced
- 1 large carrot or 2 small carrots, grated
- ⅓ cup fresh spinach, chopped
- 1½ pounds lean ground chicken breast, preferably organic
- salt and pepper to taste
- Tzatziki:
- 4 ounces greek yogurt
- 1/4 cup sour cream
- 1 hothouse cucumber, unpeeled
- 2 tablespoons freshly squeezed lemon juice
- 1 small garlic clove, chopped
- 1 tablespoon fresh dill, finely chopped
- 1 tablespoon fresh mint, finely chopped
- kosher salt and freshly ground black pepper, to taste
- 1-2 teaspoons olive oil
- Optional:
- lettuce + tomatoes, feta, and onions
Instructions
Chicken Burgers:

In a large bowl, mix ground chicken with veggies (i’m keeping them raw but you can sauté first before, if you wish!), salt and pepper. Combine well and shape into 6 patties, about ¾-inch thick. Chill for 1 hour if possible to help hold their shape better.

Heat a nonstick griddle or a large nonstick frying pan over medium-high heat and brush with a small amount of canola or coconut oil.

Cook patties 5-6 minutes on each side. Serve with tzatziki and toppings of choice!
Tzatziki:

Grate the cucumbers and drain over a strainer (20-30 minutes).

Dry well with paper towel and squeeze most of the liquid out.Add the grated cucumber to a large bowl and combine with remaining ingredients. Taste for seasonings.
