The Very Best Chicken Salad
Ingredients
- 1 store bought rotisserie chicken, chopped (skin and bones discarded) or 4 boneless leftover cooked chicken breasts
- 1 crisp apple, cored and cut into ½ -inch pieces
- ¾ to 1 cup whole red seedless grapes, thinly sliced
- 3 tablespoons red onion, chopped
- 3 tablespoons chopped fresh tarragon leaves
- 1 cup Greek yogurt or mayo
- ½ fresh lemon, juiced
- 1 tablespoon Dijon mustard
- 1 tablespoon olive oil
- ¼ teaspoon black pepper
- ½ cup chopped candied pecans, regular pecans, or walnuts, toasted (optional)
Instructions
- In a large bowl, combine chicken, apples, grapes, red onions, onions, tarragon, mayo, Dijon, lemon juice, black pepper, olive oil, and pecans, if desired. Stir to combine.
- Spread over, bread, and crackers, or add a scoop or 2 to lettuce leaves and eat as a lettuce wrap. Enjoy!
Notes
Mayo can be partially subbed with Greek yogurt
