Sweet Potato Fries with Chipotle Crema
Ingredients
- Sweet Potato Fries:
- 2 large sweet potatoes
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon ground chipotle chili pepper
- ½ teaspoon kosher salt, plus more to taste
- ¼ teaspoon cracked black pepper
- 2 tablespoons chipotle crema, plus more to taste
- 2 ounces crumbled feta
- ½ teaspoon dried oregano flakes
- Chipotle Crema:
- ¼ cup mayo
- 1 cup sour cream
- 2 chipotle peppers in adobo sauce
- ½ lime, juiced
- 1 clove garlic
- salt to taste
- Optional Toppings:
- bacon crumbles
- guacamole
- jalapeno slices
Instructions
- Sweet Potato Fries:
- Preheat an oven to 425°F. Line a large baking sheet with parchment paper.
- Rinse and dry the sweet potatoes. Peel and cut potatoes lengthwise into matchsticks about ¼ inch wide and 3 inches long.
- In a large bowl, toss the sweet potatoes with oil, chipotle, garlic powder, and salt + pepper. Spread the potatoes in a single layer (careful not to overcrowd the pan or they will steam and not crisp) on a baking sheet. Roast until tender and golden brown, 25 to 30 minutes.
- Transfer sweet potato fries to a serving platter and top with chipotle crema, feta, oregano additional toppings of choice. Serve immediately. Enjoy!
- Chipotle Crema:
- In a food processor, add the mayo, sour cream, chipotle peppers, lime juice, garlic and a pinch of salt. Process until the sauce becomes smooth and creamy. Set aside or refrigerate until ready to use.
