Spicy Cucumbers and Red Onion Salad
Ingredients
- 2 large seedless cucumbers, cut into slices
- 1 red onion, sliced into wedges
- 1 red chili pepper, sliced and seeded
- 1 cup rice vinegar
- 1/3 cup white granulated sugar
- 2 teaspoons kosher salt
Instructions
- Set a strainer over a large bowl. Add the cucumbers and toss with the salt and drain for 1 hour.
- In another bowl, whisk together the rice vinegar, sugar, and salt until the sugar is completely dissolved.
- Add the cucumbers, onions, and chili pepper to the vinegar mixture. Let stand at room temperature for 1 hour before serving or refrigerate for up to 1 week. Enjoy!
