Salmon and Veggie Skewers
Ingredients
- 12 ounces salmon fillet
- 1 yellow squash
- 1 zucchini
- ¼ large red onion
- ½ cup olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- ½ lemon, for serving
Instructions
- Cut the salmon, squash, zucchini and red onion into 1½ inch chunks.
- In a bowl, combine olive oil, garlic powder, paprika, salt, and black pepper. Add salmon and veggie pieces and marinade with the oil mixture for 15 minutes.
- Thread your skewers alternately with the salmon and veggies. Roast in the oven at 450ºF. or grill on high heat for 8-10 minutes, or until the fish is cooked through and the veggies are softened a bit.
- Serve with a squeeze of lemon. Enjoy!
