PF Chang’s-ish Chicken Lettuce Wraps
Ingredients
- 2 tablespoon canola or grapeseed oil
- 1 pound ground chicken
- 1 onion, chopped
- 2 cloves garlic, chopped
- 1 1-inch piece of ginger, grated
- ¼ cup hoisin sauce
- 2 tablespoons soy sauce
- 2 tablespoons rice wine vinegar
- 1 tablespoon chili sauce or Sriracha, optional
- 1 8-ounce can of whole water chestnuts, drained and diced
- ½ cup diced pineapple, optional
- 1 head butter lettuce
- purple cabbage leaves, optional
- Optional Toppings:
- cabbage, shredded
- carrots, shredded or thinly sliced
- cilantro
- green onions, thinly sliced
- jalapeño, thinly sliced
- sesame seeds
Instructions
- In a large skillet heat oil, over medium high heat. Add ground chicken and cook, crumbling with a wooden spoon. Stir in the onion and cook on medium heat 3-5 minutes, until translucent. Add the grated garlic and ginger and cook 30-40 seconds, or until fragrant. Stir in the hoisin sauce, soy sauce, rice wine vinegar, chili sauce, water chestnuts, pineapple (if using), salt, and black pepper; cook for 3 minutes.
- Spoon chicken mixture into the center of each lettuce/cabbage leaf and finish off with toppings of choice. Enjoy!
