Persimmon Collins

Servings 1 Serving


  • Persimmon Simple Syrup:
  • 2 small persimmons, tops removed and chopped (1 cup)
  • ½ cup sugar
  • 1 cup water
  • 3 2- inch strips lemon zest
  • 2 whole star anise
  • Cocktail:
  • 1½-2 ounce gin or vodka
  • ounce persimmon syrup
  • 1 ounce freshly squeezed lemon juice
  • 2 ounces sparkling water, plus more to taste
  • persimmon and lemon slices, for garnish


  • Persimmon Simple Syrup:
  • In a small saucepan over medium heat, combine persimmons, sugar, water, lemon zest, and star anise When mixture boils, reduce heat to a low heat, simmer and steep for 15 minutes. Remove zest and star anise and puree mixture using a stick blender or regular blender, and funnel into a container with a lid. Chill. Syrup will keep for 1 week sealed in the fridge. Makes about 1½ cups syrup.
  • Cocktail:
  • Fill a cocktail shaker and a cocktail glass with ice. Measure gin or vodka, syrup, and lemon juice into shaker. Seal, and shake vigorously for 30 seconds. Strain into glass, top off with sparkling water; garnish with persimmon and lemon slices and a star anise. Cheers!
