Creamy Strawberry Coconut Milk Ice Pops
Ingredients
- 1 (13.5 oz.) can full-fat coconut milk
- 1 pint fresh strawberries chopped, divided
- 1 medium banana sliced (optional)
- 2 tablespoons maple syrup
- 12 (3 oz.) paper cups
- 12 wooden pop sticks
Instructions
- Place coconut milk, 1½ cups chopped strawberries, banana (if using), and syrup in a blender; cover and process until smooth. Divide remaining strawberries among 12 molds or paper cups. Pour pureed mixture on top, filling ¾ full. Chill in refrigerator for 1 hour. Insert sticks and freeze until firm, at least 4 hours. Enjoy!
