The perfect Mother’s Day brunch inspiration that will make her happy!
So Mother’s Day is approaching….for those looking for last minute inspiration on how to host the perfect brunch for mom, I have the perfect blog for you. Funny story, my inspiration actually comes from a personal event I actually hosted for a girlfriend of mine last year. I fell in love with the table setting and all the dishes I prepared, that I felt I need to make my inspo a blog for Mother’s Day!
To start, make a quick menu of what food you would like to serve for mom on her special day. Depending on the size of your party, us Cubans have big families, I would recommend having two salads, two appetizers, one main entree and a dessert. There is nothing wrong with leftovers and mom will be happy to have extra food for days to come.
My friends and family love my Chicken & Waffles! It’s a quick, easy, and so good! If you are pressed for time, I would suggest making a batch of waffles with your waffle maker and buying a platter of chicken tenders from Publix (they really are the best!). And if you are feeling guilty about going with the store-bought stuff, then feel free to make a maple butter to jazz things up! All you do is combine 1 stick of room temperature butter with 1/4 cup of maple syrup and a pinch of salt- stir until creamy and DONE!!!
Next, I would buy 4-6 bottles of champagne (prosecco works too) depending on the size of your party. Don’t worry extra bottles can be saved for future weekend festivities or a midweek Aperol Spritz (my all-time favorite cocktail!).
I like to keep my mimosas classic and I stick to fresh orange juice, but you can certainly make them with blood oranges or grapefruit juice instead. Start by chilling your bubbly and juice the night before, this is really important because if you don’t then you have to add ice and that will dilute your drink (oh noooo!) Preparing the actual cocktail couldn’t be simpler! Pour the bubbly into a champagne glass (tilt the glass towards the bottle at a 45-degree angle to reduce foam and for more stability) and top with juice. I like to use a 50/50 ratio of champagne to orange juice but you may prefer it a little stronger, if so, just adjust it to your liking.
Finally, the garnish! Don’t forget to garnish your drink with fresh fruit for an extra touch! You can add the fruit to the inside of the glasses or the rim.
I know not everyone is going to want to make this extra step, but I love making pretty flower ice cubes for the ice bucket! This is such a fun and simple way to add a little style to your party! Plus, you can prepare the ice cube trays a few days in advance so there is minimal fuss involved. All you need are the trays, water, and edible flowers- that’s it! Moms love mimosas but pretty ice will definitely keep her coming back for more!
Finally we get to dessert because who doesn’t want dessert on Mother’s Day?! If you missed my blog last month, here are some decadent dessert recipes you can try. If you want to go the quicker route and are pressed for time, a good pound cake is always a good last minute choice. Publix sells this delicious Vanilla Chocolate Marble Pound Cake that you must try! Mom will love too – trust me!
Lastly, you know I have a weak spot for all things beautiful and an ongoing love affair with charming tableware. The goal is to find a magical interplay amongst the decorations and pieces on your table. That said, I usually follow the less is more rule.
Fresh flowers or greenery is almost always a must! Here are some of our favorites: eucalyptus, lavender, succulents, gerbera daisies, tulips, peonies, fresh herbs and olive branches.
Mini bud vases filled with your favorite flowers or greenery.
Handwritten name cards are always a nice touch.
I also prefer glass plates or nice china and real napkins. But don’t stress about ironing those napkins. You can twist them into a knot and no one will notice that they’re wrinkled or just dampen linens and toss them in the dryer for a quick fix.
