Oven Roasted Delicata Squash

Oven Roasted Delicata Squash
Ingredients
- 2 large delicata squashes, scrubbed clean
- 1 teaspoon kosher salt
- ½ teaspoon cracked black pepper
- 2 tablespoons olive oil
- ½ fresh lemon, for serving
- Everything but The Bagel Seasoning, for serving
Instructions
- Preheat oven to 425°F. Line a rimmed baking sheet with parchment paper.
- Trim ends off of each squash, cut into rounds or half-moons and scoop out seeds.
- Place squash onto the prepared baking sheet. Sprinkle with salt + pepper, and drizzle with olive oil; coat well on both sides.
- Transfer to oven and roast 20-25 minutes or until fork-tender, flipping halfway through cooking for even browning.
- Squeeze a little fresh lemon juice and sprinkle with bagel seasoning. Serve immediately. Enjoy!
