Salmon Bowls:
In a small bowl or measuring cup, whisk together the orange juice, soy sauce, guava marmalade, cayenne, and pepper. Pour marinade over the salmon chunks and let sit for 15 minutes.
Spray air fryer basket with cooking spray. Drain the marinade and set aside. Place the salmon in the basket and set air fryer to 400°F degrees. Cook for 8-10 minutes, or until the salmon has reached your desired doneness.
Meanwhile, pour the reserved marinade into a small sauce pan and bring to a boil over medium-high heat. Cook for 2-3 minutes or until the sauce has reduced into a glaze.
Drizzle the glaze over the salmon and serve with rice, toppings of choice, and spicy mayo. Enjoy!

Whisk together mayonnaise and Sriracha. Refrigerate in a covered container until ready to serve.
