Greek Style Turkey Burgers
Ingredients
- 1 pound ground turkey
- 1 cup fresh spinach leaves, chopped
- 6-8 whole sun-dried tomatoes (in oil), chopped
- ¼ cup chopped red onion
- 2 cloves garlic, pressed or minced
- 2 tablespoons fresh chopped dill
- 1 tablespoon mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon kosher salt
- ¼ teaspoon ground black pepper
- 1 tablespoon olive oil
- 4 hamburger buns
- Toppings:
- lettuce leaves, sliced red onion, tomatoes…
- Tzatziki Sauce:
- 1 seedless cucumber, with skin
- ¾ cup full-fat plain Greek yogurt
- ¼ cup crumbled feta cheese, (optional)
- 2 cloves garlic, pressed or minced
- 1 tablespoon fresh lemon juice
- 2 tablespoons fresh minced dill
- 1 teaspoon kosher salt
- ¼ teaspoon ground black pepper
Instructions
- In a large bowl, add the ground turkey, spinach, sun-dried tomatoes, red onion, garlic, dill, mayo, Dijon, salt and black pepper. Gently mix with your hands to combine.
- Divide the burger mixture into 4 patties. Cover and refrigerated for 30 minutes, or overnight.
- Preheat oven to 400ºF.
- Place the turkey burgers on ta sheet pan and drizzle with olive oil. Transfer to the oven and cook for 20-25 minutes
- Slather buns with tzatziki sauce and garnish with toppings of choice. Enjoy!
- Tzatziki Sauce:
- Grate the cucumber and place in a strainer. Set aside for 30 minutes.
- In a bowl, combine the drained cucumber, yogurt, garlic, lemon juice, fresh dill, kosher salt and ground black pepper and mix well. Cover and refrigerate for 30 minutes or up to 3 days.
