Greek Pasta Salad
Ingredients
- 16 ounces short pasta of choice, cooked
- 1 long seedless cucumber, diced
- 1 15-ounce can chickpeas, drained
- 1 pint grape tomatoes, halved
- ½ cup feta cheese, cubed
- ½ cup sliced pitted olives
- ⅓ cup red onion diced
- Vinaigrette:
- ½ cup red wine vinegar
- 1 cup olive oil
- 1 tablespoon dried oregano leaves
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- ¼ teaspoon cracked black pepper
Instructions
- Combine red wine vinegar, olive oil, oregano, garlic powder, salt, and black pepper in a small bowl. Add cucumbers, chickpeas, tomatoes, olives, red onions, and cooked pasta; toss to combine. Top with feta cheese and refrigerate at least 2 hours before serving. Enjoy!
