Cantaloupe + Prosciutto Salad

Cantaloupe + Prosciutto Salad
Ingredients
- 1 ripe cantaloupe, cut in wedges
- ½ pound prosciutto, sliced
- ¼ cup crumbled goat cheese
- ½ fresh lime, juiced
- 2 tablespoons honey
- 3- 4 sprigs fresh mint, torn
- 2 teaspoons olive oil
- sprinkle of coarse salt + cracked black pepper
Instructions
- Place melon wedges in large serving platter. Wrap each wedge with a slice of prosciutto. Add the goat cheese, lime juice, honey, and mint over the melon. Drizzle olive oil and finish with a pinch of course sea salt. Enjoy!
Notes
To make ahead, slice and cover melon wedges with paper towel and then plastic wrap; refrigerate until ready to use. Add remaining ingredients right before serving.
