Boursin Pasta and Mushrooms

Boursin Pasta and Mushrooms

Servings 4 Servings

Ingredients
  

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 (12-ounce) package of sliced mushrooms
  • ¼ teaspoon ground black pepper, plus more to taste
  • 4 cloves garlic, minced or roasted garlic cloves, smashed into a paste
  • ½ cup chicken broth
  • ¼ cup white wine
  • 1 (5.3-ounce) package Boursin caramelized onion cheese
  • ¾ cup parmesan cheese, plus more to taste
  • 1 (16-ounce) package store-bought gnocchi

Instructions
 

  • Heat olive oil and melt butter in a heavy-bottomed skillet, over medium-high heat. Add the mushrooms, season with black pepper, and sauté until golden, about 3 minutes. Add garlic and sauté until fragrant, about 20 to 30 seconds. Pour in the broth and wine and simmer for 2 to 3 minutes. Stir in the Boursin cheese, half of the parmesan, and half of the reserved starchy water; keep stirring until cheese is melted.
  • Boil gnocchi for 3 minutes. Drain and reserve 1 cup of the starchy water. Add gnocchi to the skillet with the mush cream sauce and stir until well combined. Finish with extra parm, if desired. Serve immediately. Enjoy!
