Burgers:
In a medium a skillet over medium heat, fry bacon until almost crispy. Remove some of the bacon fat, if needed leaving at least 2 tablespoon in the pan. Add the onions to the bacon and sauté for 3-4 minutes. Add garlic and quickly cook 20-30 seconds. With a slotted spoon, transfer mixture to a bowl and allow to cool.
In a separate large bowl, combine the ground beef, worsterchire sauce, paprika, salt and pepper. Shape into 8 patties. Create a well in the center of each patty. Add a spoonful of the bacon-cheese mixture and fold the edges over the filling to seal.
Sear burgers in the same pan used for the bacon or on a hot grill pan over medium-high heat, flipping once until desired doneness is reached, approximately 4 minutes each side for medium. Top with American cheese.
Serve in buns with sauce and garnishes. Enjoy!
Sauce:
Stir all ingredients together. Taste and adjust seasoning to taste. Cover and refrigerate until ready to use.
