Prepare the cauliflower by removing its leaves, and by cutting its stem to create a flat base. Cut the cauliflower from top to bottom into about 4 (1-inch) thick steaks.
In a small bowl whisk together the olive oil, cumin, oregano, paprika, salt, and black pepper. Brush the oil mixture on each side of the cauliflower steaks.
Place the cauliflower in the air fryer basket, cook at 400°F for 12 minutes. Gently flip the steak halfway through cooking.
While the cauliflower is roasting, make the yogurt sauce. In a small bowl, mix the yogurt, dill, lemon, garlic, olive oil, salt, and black pepper.
Once the cauliflower is ready, remove from the air fryer and garnish with parsley, green onions, and pine nuts. Serve with yogurt sauce. Enjoy!
