Sweet and Sticky Sesame Chicken Thighs

Ingredients
  

  • Honey-Soy Sauce:
  • ¼ cup honey
  • ¼ cup soy sauce
  • 3 tablespoons sweet chili sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 2 tablespoons grated ginger
  • 4 garlic cloves, minced
  • pinch crushed red peppeer flakes
  • Chicken:
  • 6 chicken thighs
  • 1 teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 3 tbsp cornstarch
  • 3 tablespoons grapeseed or neutral oil of choice
  • green onions, for garnish
  • sesame seeds, for garnish

Instructions
 

  • Preheat oven to 400°F.
  • To make the sauce, combine honey, soy sauce, sweet chili sauce, rice vinegar, sesame oil, ginger, garlic, and red pepper flakes in a small bowl. Set aside until ready to use.
  • Season chicken with salt and black pepper, then sprinkle the cornstarch to coat.
  • Heat oil in a large cast iron or oven-proof skillet over medium high heat. Add chicken, skin-side down (if using chicken with skin), and sear both sides until golden brown, about 3 to 4 minutes per side. Stir in the sauce.
  • Transfer pan to the oven and roast until completely cooked through, reaching an internal temperature of 165°F, about 25 to 30 minutes.
  • Serve with white rice and garnish with sesame seeds and green onions. Enjoy!
