Grilled Shrimp Skewers
Ingredients
- bamboo skewers
- 1 pound large shrimp peeled and deveined
- 3 tablespoons olive oil, plus more to brush on grill
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon kosher salt
- ¼ teaspoon cracked black pepper
- 3 tablespoons fresh chopped chives
- 1 fresh lime, plus wedges for serving
Instructions
- Soak the skewers in water for at least a half an hour before grilling.
- In a large bowl whisk together the oil, oregano, paprika, garlic powder, salt, and pepper. Add the shrimp and toss to coat with the marinade. Marinate for half an hour to an hour.
- Preheat a grill to medium-high heat- 400°F. Baste the grill grates with some olive oil so that the shrimp don’t stick to the grill.
- Thread the shrimp onto skewers. Place the shrimp on the prepared grates and grill 2 minutes per side or until the shrimp turns pink and is cooked through. Remove from grill and squeeze on fresh lime juice. Garnish with fresh chives and serve with lime wedges. Serve immediately. Enjoy!
