Beef and Cheese Burritos

Ingredients
- 1 tablespoon olive oil
- 1 small onion, chopped
- 1 clove garlic, minced
- 1 teaspoon cumin
- sea salt
- black pepper
- 1 pound ground beef
- 1 cup enchilada sauce
- 1 can (15 oz.) black beans, drained
- 1 cup Mexican rice, cooked
- 1/3 cup frozen corn
- eight 8-inch flour tortillas
- 2 cups shredded cheddar or jack cheese (or mixture of both)
- 3 green onions, chopped
- sour cream, salsa and avocado, for serving
Instructions
- Preheat the oven to 350 degrees.
- Heat oil in large skillet. Sautee onions 3–5 minutes, add garlic, cumin, salt + pepper and stir until garlic starts to soften but being careful not to burn. Add beef and enchilada sauce, stir and cook 7-8 minutes.
- Spray 13x9-inch glass baking dish with nonstick spray.
- To assemble burritos, spoon beef, beans, rice, corn and cheese onto the center of the tortilla. Roll up tightly and place the filled tortilla seam-side-down in the pan. Continue with remaining tortillas and filling until you have filled all 8 tortillas and have snuggled them alongside of one another in the pan.
- Bake 10-12 minutes.
- Serve burritos with sour cream, salsa and avocado.
