Quick Pickled Red Onions (No Boil Method)

Ingredients
  

  • 1 cup rice vinegar
  • 1/3 cup white granulated sugar
  • 2 teaspoons kosher salt
  • 2 red onions, peeled and thinly sliced
  • 1 jalapeƱo, serrano, or Thai chili pepper, stem removed and thinly sliced crosswise (optional)

Instructions
 

  • In a large bowl, whisk together the rice vinegar, sugar, and salt until the sugar is completely dissolved. Add the red onions and chili pepper, if using. Let stand at room temperature or refrigerate for 1 hour before serving (if you can resist the wait). Enjoy!
