Preheat the oven to 400º F. Line a baking sheet with parchment paper.
In a small bowl, combine brown sugar, granulated sugar and cinnamon; mix well. Set aside until ready to use.
Roll out puff pastry sheet. Place brie slices on puff pastry. Arrange apple slices over the cheese. Sprinkle cinnamon sugar over the apples. Season with ½ teaspoon salt and black pepper and place butter on top. Score the edges to create a border. Brush the edges with the egg wash. Transfer to the oven and bake 15-20 minutes, until the pastry is golden and the cheese melted.
In a small saucepan over medium-low heat, add honey, thyme, and remaining ½ teaspoon salt. Simmer 5-6 minutes, stirring occasionally.
Drizzle thyme honey over the tart. Enjoy!
