Chocolate Chip Crumble Muffins

Ingredients
  

  • Muffins:
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • cup granulated sugar
  • cup vegetable oil
  • ¾ cup milk
  • 2 eggs
  • 2 teaspoons of vanilla extract
  • 1 cup semi-sweet cholate chips or chunks
  • Streusel:
  • 3 tablespoons all-purpose flour
  • 5 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 3 tablespoons cold butter, cubed
  • Optional Topping:
  • 1 tablespoon espresso sugar (the Mad Table Sweet Jo)

Instructions
 

  • Preheat the oven to 350º Fahrenheit. Line a 12 muffin pan with paper liners.
  • In a large mixing bowl, combine flour, baking powder, baking soda, and salt; set aside.
  • In a separate large bowl, whisk together the sugar, oil, milk, eggs, and vanilla until mixture is smooth.
  • Slowly add dry ingredients and incorporate well with wet ingredients. Fold in the chocolate chips.
  • To make the streusel: In a small bowl, add the flour, brown sugar, cinnamon, and butter. Mix together with your hands until you have a crumbly mixture. Set aside.
  • Pour batter into the muffin cups and fill two-thirds full. Evenly sprinkle streusel over the batter. Bake for 18-20 minutes (depending on oven) or until a toothpick inserted into the center comes out clean. Garnish with a little espresso sugar. Enjoy!
