Meghan Markle’s Skillet Spaghetti

Ingredients
  

  • 3 tablespoons olive oil
  • 5 cloves garlic thinly sliced
  • 1 pint cherry tomatoes halved
  • 1 Fresno chili pepper thinly sliced
  • 1 fresh lemon zested and juiced
  • ¼ cup white wine
  • 2 teaspoons kosher salt
  • 1 teaspoon dried oregano leaves
  • ¼ teaspoon ground black pepper
  • 4 ounces feta cheese in brine
  • 1 pound uncooked spaghetti
  • 4 cups boiling chicken broth or water
  • 2 cups fresh arugula
  • ¾ cup grated parmesan
  • handful fresh basil

Instructions
 

  • Heat olive oil in a large skillet over low heat. Add garlic and infuse the oil for 1 to 2 minutes (without letting it brown).
  • Increase the heat to medium-high, add the cherry tomatoes, and sauté for 2 to 3 minutes. Add the Fresno chili pepper, lemon zest, lemon juice, white wine, salt, oregano, black pepper, and dry spaghetti. Pour in the boiling chicken broth or water and stir.
  • Cover the pan and cook for 9 minutes, stirring occasionally to prevent the pasta from sticking.
  • Uncover, add arugula, parmesan, and finish with fresh basil.
  • Serve and enjoy!
