Salmon Burgers with Lemon-Dill Yogurt Sauce
Ingredients
- Salmon Burgers:
- 1 pound fresh Salmon, skinned and de-boned
- ¼ cup green onions, thinly sliced
- ¼ cup fresh cilantro, finely chopped
- ¼ cup fresh parsley, finely chopped
- ½ jalapeño, finely chopped (optional)
- 1 egg yolk
- 1½ teaspoons Dijon mustard
- ½ teaspoon kosher salt
- ½ teaspoon paprika
- 2 tablespoons olive oil
- lemon wedges, for serving
- 6 burger buns (optional)
- Lemon-Dill Yogurt Sauce:
- 1 cup Greek yogurt
- zest of 1 lemon + juice of ½ lemon
- handful of fresh dill, chopped
- ½ teaspoon kosher salt, to taste
- ¼ teaspoon black pepper
- Optional Toppings:
- avocado
- cabbage slaw
- grilled pineapple
- lettuce
- pickled onions
- tomatoes
Instructions
- Salmon Burgers:
- Using a sharp knife, finely dice the salmon. Place in a large bowl. Add the green onions, cilantro, parsley, jalapeño (if using), lemon juice, Dijon, egg yolk, salt and paprika; mix to combine. Gently mix and shape into patties. Refrigerate until ready to cook.
- Preheat oven to 425°F. Line a baking sheet pan with parchment paper. Places the salmon patties on the prepared pan. Rub olive oil on the patties. Bake for 15 minutes, turn and continue baking another 5 minutes until golden brown on both sides.
- Serve immediately with lemon slices and lemon-dill yogurt sauce. Enjoy!
- Lemon-Dill Yogurt Sauce:
- In a small bowl, combine the yogurt, lemon zest, lemon juice, fresh dill, salt, and pepper. Mix well and refrigerate until ready to use.
