Sweet and Sour Shrimp

Servings 4 Servings

Ingredients
  

  • Sauce:
  • ½ cup honey
  • cup rice vinegar
  • 1 tablespoon soy sauce
  • 2 tablespoons ketchup
  • 3 tablespoons pineapple juice
  • 1 teaspoon sriracha
  • ¼ teaspoon crushed red pepper flakes
  • 2 teaspoons corn starch mixed
  • 2 tablespoons water
  • Shrimp:
  • 2 tablespoons canola oil
  • 1 pound shrimp, peeled and deveined
  • ½ onion, sliced
  • 1 red bell pepper, de-seeded and cut into bite-sized pieces
  • 1 zucchini, cut into bite-sized pieces
  • 1 cup fresh pineapple chunks
  • 4 garlic cloves, minced
  • ½ teaspoon grated ginger
  • Garnish:
  • 2-3 fresh green onions, sliced
  • 1 tablespoon sesame seeds

Instructions
 

  • In a small bowl, combine all of the ingredients for the sauce. Set aside until ready to use.
  • Heat 2 tablespoons oil in a wok or heavy bottom pan, over medium-high heat. Gently add the shrimp and sear for 2 minutes on each side. Transfer the shrimp to a plate. Cover with foil to keep warm.
  • In the same pan used for the shrimp over medium heat. Add onion, and bell peppers and stir-fry for 1 minute. Add zucchini, and pineapple and continue to stir fry for 1 more minute. Add garlic and ginger; quickly cook for 20-30 seconds. Pour in sweet and sour sauce, and simmer for 1-2 minutes to thicken. Add shrimp back in the pan and stir to coat. Garnish with green onions, and sesame seeds. Enjoy!
