Preheat oven to 425°F. Line a rimmed baking sheet with parchment paper.
Trim ends off of each squash, cut into rounds or half-moons and scoop out seeds.
Place squash onto the prepared baking sheet. Sprinkle with salt + pepper, and drizzle with olive oil; coat well on both sides.
Transfer to oven and roast 20-25 minutes or until fork-tender, flipping halfway through cooking for even browning.
Squeeze a little fresh lemon juice and sprinkle with bagel seasoning. Serve immediately. Enjoy!
