seedless cucumber

plain full-fat Greek yogurt

sour cream

garlic,
minced or grated

extra-virgin olive oil

tablespoon
fresh lemon juice or distilled white vinegar

kosher salt

teaspoon
cracked black pepper

tablespoon
finely chopped fresh dill or mint (or both)
Instructions
Grate the cucumber and drain through a fine mesh sieve for 1 hour.
In a large bowl, combine all ingredients, refrigerate until ready to use. Enjoy!
