Tzatziki

Servings 3 Cups

Ingredients
  

  • 1 seedless cucumber
  • 1 cup plain full-fat Greek yogurt
  • ¼ cup sour cream
  • 2 cloves garlic, minced or grated
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh lemon juice or distilled white vinegar
  • ½ teaspoon kosher salt
  • ¼ teaspoon cracked black pepper
  • 1 tablespoon finely chopped fresh dill or mint (or both)

Instructions
 

  • Grate the cucumber and drain through a fine mesh sieve for 1 hour.
  • In a large bowl, combine all ingredients, refrigerate until ready to use. Enjoy!
