Peach, Watermelon, and Feta Salad

Ingredients
Salad:
½
small seedless watermelon,
cut into wedges

yellow peach,
thinly sliced

tablespoons
fresh mint, (torn or small leaves),
plus extra for garnish

ounces
fresh feta cheese,
cubed
1
seedless cucumber,
sliced into ½ inch thick rounds (optional)
Vinaigrette:
4
tablespoons
olive oil
3
tablespoons
red wine vinegar
1
clove
garlic,
chopped
1
teaspoon
dried oregano
½
teaspoon
kosher salt
¼
teaspoon
cracked black pepper
Instructions
Place watermelon, peaches, cucumbers (if using), and feta in a serving platter.
In a small bowl whisk together the vinaigrette ingredients and drizzle over the salad.
Season the mixture with salt and pepper to taste. Garnish with mint. Enjoy!
