Quick Pickled Red Onions

Ingredients
  

  • 1 red onion, sliced into thin wedges
  • 1 cup rice vinegar
  • 1/3 cup granulated sugar
  • 2 teaspoons kosher salt
  • 1-2 chili peppers, (optional)

Instructions
 

  • Place onions in a tall mason jar or container with a tight fitted lid. In a large bowl, whisk vinegar, sugar and salt. Pour liquid over onions. Let stand at room temperature for 1 hour before serving or refrigerate up to 2 weeks. Enjoy!
