Place melon wedges in large serving platter. Wrap each wedge with a slice of prosciutto. Add the goat cheese, lime juice, honey, and mint over the melon. Drizzle olive oil and finish with a pinch of course sea salt. Enjoy!

To make ahead, slice and cover melon wedges with paper towel and then plastic wrap; refrigerate until ready to use. Add remaining ingredients right before serving.
