Place the peas, garlic, basil, mint, parmesan, salt + pepper in the bowl of a food processor; blitz until coarsely chopped. Add lemon juice and quickly pulse.
With the food processor running, slowly add the olive oil and blend until a creamy mixture forms. Stir to combine and season to taste with lemon juice, salt + red pepper flakes.
Serve over crusty bread/toast, favorite pasta or pizza, and best when topped with burrata, poached egg, or prosciutto and drizzled with good olive oil!!!! Enjoy
