Watermelon Fruit Pizza

Servings 8 Slices

Ingredients
  

  • 1 center-cut slice of watermelon
  • ¼ - ⅓ cup Greek yogurt
  • 1 teaspoon honey
  • ½ cup strawberries, sliced
  • cup blackberries
  • cup raspberries
  • ¼ cup blueberries
  • 2 tablespoons coconut flakes,
  • 1 tablespoon chia seeds
  • 3-4 fresh mint leaves, (optional)

Instructions
 

  • Using a sharp knife, cut off a slice of watermelon from the center, about 2-3 inches thick.
  • In a small bowl, combine yogurt and honey and spread on the watermelon.  Top with fresh fruits and finish off with coconut flakes, chia seeds, and mint (if using). Enjoy!
