1store bought rotisserie chicken,chopped (skin and bones discarded) or 4 boneless leftover cooked chicken breasts
1crisp apple,cored and cut into ½ -inch pieces
1½ cupsred seedless grapes, thinly sliced
3tablespoonsred onion,chopped
2tablespoonschopped fresh tarragon leaves
1cupmayonnaise or garlic mayo
½ fresh lemon,juiced
1tablespoonDijon mustard
1tablespoonolive oil
¼teaspoonblack pepper
½cupchopped pecans or walnuts,toasted
Instructions
In a large bowl, combine chicken, apples, grapes, red onions, onions, tarragon, mayo, Dijon, lemon juice, black pepper, olive oil, and pecans, if desired. Stir to combine.
Spread over, bread, and crackers, or add a scoop or 2 to lettuce leaves and eat as a lettuce wrap. Enjoy!
