Buttery-Garlicky Pork Loin
- 3 pound pork loin
- 3 tablespoons melted butter
- 2 tablespoons fresh lemon or orange juice
- 3 tablespoons dijon mustard
- 4 garlic cloves, minced
- 1 teaspoon paprika
- 1 teaspoon kosher salt
- 1 sprig fresh rosemary, chopped
Preheat the oven to 450°F.
In a medium bowl, mix together all ingredients (except pork) and combine well. Pour the sauce over the top of the pork loin and gently massage the marinade into the meat. Let stand at room temperature for 15 minutes.
Place pork loin in an oven safe 12-inch skillet or roasting pan. Roast for 50-60 minutes or until internal temperature reaches 145°F., rotating pan halfway through cooking.
Remove pork from the oven and transfer to a large plate, tent with foil, and let rest 10 minutes. Slice and enjoy!
