- ½ cucumber, sliced
- 8-10 fresh mint leaves, plus extra for garnish
- 2 tablespoons granulated sugar (or substitute with 1 tablespoon simple syrup)
- 1 fresh lime, cut in 4 wedges
- 4-5 ice cubes
- 1½-2 ounces white rum
- 4 ounces club soda
Squeeze the lime wedges in a mortar + pestle, shaker or glass; add the limes, mint, and sugar (if using). Muddle well to break up some of the mint leaves, making sure not to crush them. Add cucumber, ice cubes, rum and club soda; give it a good shake or stir.
Garnish with cucumber slices,lime wedge and mint leaves.
