PF Chang’s-ish Chicken Lettuce Wraps

Servings 4 Servings

Ingredients
  

  • 2 tablespoon canola or grapeseed oil
  • 1 pound ground chicken
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 1 1-inch piece of ginger, grated
  • ¼ cup hoisin sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon chili sauce or Sriracha, optional
  • 1 8-ounce can of whole water chestnuts, drained and diced
  • ½ cup diced pineapple, optional
  • 1 head butter lettuce
  • purple cabbage leaves, optional
  • Optional Toppings:
  • cabbage, shredded
  • carrots, shredded or thinly sliced
  • cilantro
  • green onions, thinly sliced
  • jalapeño, thinly sliced
  • sesame seeds

Instructions
 

  • In a large skillet heat oil, over medium high heat. Add ground chicken and cook, crumbling with a wooden spoon. Stir in the onion and cook on medium heat 3-5 minutes, until translucent. Add the grated garlic and ginger and cook 30-40 seconds, or until fragrant. Stir in the hoisin sauce, soy sauce, rice wine vinegar, chili sauce, water chestnuts, pineapple (if using), salt, and black pepper; cook for 3 minutes.
  • Spoon chicken mixture into the center of each lettuce/cabbage leaf and finish off with toppings of choice. Enjoy!
