In a small baking dish, combine the olives, olive oil, garlic, shallot, thyme, oregano, and a pinch of red pepper flakes. Bake 20-25 minutes, until the garlic turns golden and the oil is sizzling.
Meanwhile, whip the feta. Combine all ingredients in a food processor and pulse until smooth and creamy. Spoon the feta into a small oven proof baking dish or ramekin and top with the warm olives. Place in oven for 5-7 minutes. Serve with crusty bread. Enjoy!
