Apple + Brie Tart

Ingredients
  

  • 2 tablespoons brown sugar
  • 1 tablespoon granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 frozen puff pastry sheet, thawed
  • 1 (8 ounce) brie wheel, sliced
  • 1-2 apples thinly sliced
  • 1 teaspoon flaky salt, divided
  • ¼ teaspoon cracked black pepper
  • 4 tablespoons butter, thinly sliced and cut in half
  • 1 egg, beaten
  • 1 tablespoon water, for egg wash
  • 1/3 cup honey
  • 2 tablespoons fresh chopped thyme

Instructions
 

  • Preheat the oven to 400º F. Line a baking sheet with parchment paper.
  • In a small bowl, combine brown sugar, granulated sugar and cinnamon; mix well. Set aside until ready to use.
  • Roll out puff pastry sheet. Place brie slices on puff pastry. Arrange apple slices over the cheese. Sprinkle cinnamon sugar over the apples. Season with ½ teaspoon salt and black pepper and place butter on top. Score the edges to create a border. Brush the edges with the egg wash. Transfer to the oven and bake 15-20 minutes, until the pastry is golden and the cheese melted.
  • In a small saucepan over medium-low heat, add honey, thyme, and remaining ½ teaspoon salt. Simmer 5-6 minutes, stirring occasionally.
  • Drizzle thyme honey over the tart. Enjoy!
