Preheat grill or pan on high heat. Brush corn with oil. Grill corn, turning every 2-3 minutes until slightly charred on all sides. Cool and cut corn kernels off the cob.
In a medium bowl, combine corn kernels, green onions, jalapeno, cilantro, lime juice, garlic, mayonnaise, sour cream, chili powder, paprika, and salt + pepper; stir to combine. Garnish with cheese and extra cilantro. Enjoy!
