Pear and Goat Cheese Phyllo Tart

Ingredients
  

  • 1 roll (8 ounce) phyllo dough, thawed as per package instructions
  • 1 pear, thinly sliced
  • 4 ounces goat cheese, chilled and sliced
  • 8 tablespoons butter, melted
  • Custard:
  • ¾ cup milk
  • 2 eggs
  • ½ cup sugar
  • 1 tablespoon vanilla
  • pinch kosher salt
  • Topping:
  • honey
  • fresh thyme leaves
  • flaky salt

Instructions
 

  • Pre-heat the oven to 350°F.
  • Take 2 layers of phyllo dough and gently fold them back and forth into an accordion shape. Lay the folded dough into the prepared baking pan. Fill gaps with slices of goat cheese and pear. Brush or pour melted butter all over the top of the tart and in betweeen the folds. Bake for 15 minutes.
  • For the custard, combine milk, eggs, vanilla, and salt. Remove the pan from the oven and evenly pour custard over the tart. Transfer the pan back to the oven and bake for 20-25 more minutes, or until golden brown.
  • Remove tart from the oven and drizzle with honey, and finish with a sprinkle of fresh thyme, and flaky salt. Enjoy!
