Cut the salmon, squash, zucchini and red onion into 1½ inch chunks.
In a bowl, combine olive oil, garlic powder, paprika, salt, and black pepper. Add salmon and veggie pieces and marinade with the oil mixture for 15 minutes.
Thread your skewers alternately with the salmon and veggies. Roast in the oven at 450ºF. or grill on high heat for 8-10 minutes, or until the fish is cooked through and the veggies are softened a bit.
Serve with a squeeze of lemon. Enjoy!
