White Bean Dip Flat Bread Pizza
Ingredients
- flatbread of choice, toasted-optional
- 1 15-ounce can cannellini beans, drained and rinsed
- 2 cloves garlic
- ½ fresh lemon juice
- 1/3 cup olive oil, plus 2 tablespoons for garnish
- ¼ cup loosely packed fresh Italian parsley leaves
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 1 seedless cucumber, finely chopped
- 1 tomato, finely chopped
- 2 radishes, finely chopped
- 1-2 teaspoons Everything but the Bagel Sesame Seasoning Blend, optional
- ¼ cup crumbled feta cheese
Instructions
- Place the beans, garlic, lemon juice, 1/3 cup olive oil, and parsley in the work bowl of a food processor. Pulse until the mixture is coarsely chopped. Season with salt and pepper, to taste.
- To assemble flat bread pizza, spread the white bean dip on the bread, and top with cucumbers, tomatoes, radishes, and feta. Finish off with extra olive oil and a few shakes of bagel seasoning. Enjoy!
