With St. Patrick’s Day celebrations happening this week, I thought it would be a great idea to share with you all 6 of my favorite “green” recipes that you can prepare for your day of festivities. By the way, these are not “traditional Irish recipes”. These are my Cuban Fusion inspired recipes that I prepare for my family and friends when I have a St. Patrick’s Day gathering.

To start off, I serve either my Green Goddess Dip with Toasty Pita Chips,

Or my Brie and Spinach Stuffed Mushrooms recipe.

Both of these appetizers are popular appetizers with my family. Also, both appetizer options are meatless on purpose, since my main course is always a heavy “Irish Inspired” recipe such as my Cuban Shepherd’s Pie.

My delicious Cuban Shepherds Pie with its delicious sweet plantain mash will have you going back for seconds!

To go along with the festive “green” St. Patrick’s theme, I serve green cocktails. Two of my favorite cocktails to celebrate with are my Matcha Martini and the classic Midori Sour. Recipes included below.

Lastly for dessert I serve my Grasshopper Bites which are the icing on the cake – literally – to end the party. These classic St. Patrick’s Day sweet minty bites are a crowd favorite and soooo sweet that no one will want more dessert after they have them!
