Maple Glazed Salmon

Ingredients
- 2 ½-pound center-cut salmon fillet with skin
- ⅓ cup orange juice
- ¼ cup soy sauce
- 1 tablespoon whole grain mustard
- ⅓ cup maple syrup
- 2 tablespoons honey
- kosher salt and black pepper
- 2 pears, halved
- 2 tablespoons olive oil
- ¼ cup dried cherries
Instructions
- In a small bowl, mix orange juice, soy sauce, mustard, maple syrup, honey, salt and pepper.
- Place salmon flesh side down in a shallow glass baking dish, and coat with half of the maple syrup mixture. Cover the dish, and marinate salmon in the refrigerator 30 minutes.
- Preheat oven to 400 degrees F.
- Cut pears in half, sprinkle with salt and pepper and drizzle with olive oil.
- Add salmon (skin side down), pears and dried cherries to the baking dish. Place in preheated oven, and bake uncovered 15-18 minutes (depending on thickness of salmon) or until easily flaked with a fork and internal temperature of center of salmon reaches 145 degrees F.
- Right before serving, transfer remaining mixture to a small sauce pan and simmer 3-5 minutes or until reduced into a thick syrup.
- Drizzle syrup over cooked salmon and pears. Serve with roasted vegetables of choice and enjoy!
