Ingredients
  1. 2 ½-pound center-cut salmon fillet with skin
  2. ⅓ cup orange juice
  3. ¼ cup soy sauce
  4. 1 tablespoon whole grain mustard
  5. ⅓ cup maple syrup
  6. 2 tablespoons honey
  7. kosher salt and black pepper
  8. 2 pears, halved
  9. 2 tablespoons olive oil
  10. ¼ cup dried cherries
Instructions
  1. In a small bowl, mix orange juice, soy sauce, mustard, maple syrup, honey, salt and pepper.
  2. Place salmon flesh side down in a shallow glass baking dish, and coat with half of the maple syrup mixture. Cover the dish, and marinate salmon in the refrigerator 30 minutes.
  3. Preheat oven to 400 degrees F.
  4. Cut pears in half, sprinkle with salt and pepper and drizzle with olive oil.
  5. Add salmon (skin side down), pears and dried cherries to the baking dish. Place in preheated oven, and bake uncovered 15-18 minutes (depending on thickness of salmon) or until easily flaked with a fork and internal temperature of center of salmon reaches 145 degrees F.
  6. Right before serving, transfer remaining mixture to a small sauce pan and simmer 3-5 minutes or until reduced into a thick syrup.
  7. Drizzle syrup over cooked salmon and pears. Serve with roasted vegetables of choice and enjoy!
