Fancy Pants Curry Pasta with Shrimp, Clams, Mussels and Corn

Ingredients
  1. 1 pound linguine
  2. 4 1/2 tablespoons olive oil
  3. 4 cloves garlic, minced or grated
  4. 1 inch fresh ginger, peeled + grated
  5. 2 red chili peppers, seeded + diced
  6. 1 red bell pepper, sliced
  7. 2 ears of corn, kernels removed from the cob
  8. 2 tablespoons Thai red curry paste
  9. kosher salt + pepper
  10. 1 (14 ounce) can full fat coconut milk
  11. 1 cup white wine
  12. 1 pound jumbo shrimp, peeled and deveined
  13. 12 littleneck clams, cleaned
  14. 12 mussels, cleaned
  15. 3 tablespoons butter, softened (for pasta)
  16. 1 -2 tablespoons butter (to sear shrimp and scallops)
  17. Baby Bok Choy
  18. 1/2 cup fresh basil, chopped
  19. 1/4 cup fresh cilantro, chopped
Instructions
  1. Bring a large pot of salted water to a boil. Boil the pasta until al dente. Drain.
  2. Heat a large high sided pot over medium heat and add 2 tablespoons olive oil. Once hot, add the garlic, ginger and red chile peppers. Cook for 1-2 minutes or until fragrant and soft. Add the bell pepper, corn and Thai red curry paste, cook another 3 minutes or until the curry paste is fragrant. Season with salt + pepper. Slowly pour in the coconut milk and wine. Stir in the clams and/or mussels. Bring the mixture to a simmer. Cover the pot with a lid and cook until all the shellfish have opened, about 5 to 8 minutes. Discard any unopened shellfish.
  3. Saute Bok Choy in 1/2 tablespoon o live oil and set aside.
  4. Sear shrimp on hot pan with 1 tablespoon butter and 1 tablespoon olive oil 5-6 minutes. Transfer to plate. On same hot pan add 1 tablespoon more butter and olive oil and seat scallops until golden crust, approximately 8 minutes. Transfer to plate with shrimp. Be careful not to overlook shrimp and scallops or it will become rubbery!
  5. Add the pasta, butter, basil and cilantro to the sauce mixture and cook 2 minutes or until warmed through. Remove from heat. Add shrimp, scallops, bok choy and toss all ingredients and enjoy!
