Double Layer Ground Beef Tacos

  1. -Tacos
  2. 2 tablespoons olive oil
  3. 1-½ pounds ground beef
  4. 2 cloves garlic, minced
  5. 1 teaspoons chili powder
  6. 1 teaspoon smoked paprika
  7. 1-teaspoon cumin
  8. 1-cup enchilada sauce
  9. kosher salt + pepper
  10. 8 flour tortillas, warmed
  11. 8 crispy tortillas, warmed
  12. 1/2 cup cotija cheese
  13. fresh cilantro
  14. 1 ear of corn
  1. 2 medium tomatoes, diced
  2. ½ red onion, finely chopped
  3. 1 garlic clove, minced
  4. 1/2 fresh jalapeno pepper, seeded and chopped
  5. 1-teaspoon ground cumin
  6. 5-6 sprigs fresh cilantro, finely chopped
  7. ½ fresh lime, squeezed
  8. 1-tablespoon fresh orange juice
  9. 1-teaspoon olive oil
  10. Salt and pepper to taste
-Cilantro Lime Cream
  1. ¼ cup sour cream
  2. 2 tablespoons chopped fresh cilantro
  3. 1 small garlic clove, minced
  4. 1-teaspoon olive oil
  5. juice and zest from one lime salt and pepper to taste
  1. -Taco
  2. Heat oil in a large pan over medium heat. Add onions and sauté until translucent (3-5 minutes). Add garlic and continue to sauté 1-2 minutes, making sure garlic does not burn. Add ground beef, chili powder, paprika, cumin, salt and pepper. Cook beef 8-10 minutes. Add enchilada sauce and cook 7-8 minutes longer. Top meat with fresh cilantro.

  4. Preheat a grill or cast iron grill pan. Drizzle the corn with olive oil, salt and pepper. Grill, rotating the corn until slightly charred, 4-5 minutes. Let cool and cut kernels off the corn.
  1. In a medium bowl, combine tomato, onion, garlic and jalapeno pepper. Season with cumin, salt and pepper and stir well. Add cilantro, olive, lime and orange juice.
-Cilantro-Lime Cream
  1. Stir all ingredients in a bowl until combined.
  2. To assemble, wrap warm soft shell around crispy shell. Add ground beef, corn, cheese, fresh salsa, and cilantro lime cream and sliced avocado (optional). Enjoy
