Chicken with Mushrooms, Bacon and Cheesy Sauce

  1. 4 slices bacon
  2. 3-tablespoon butter
  3. 2 large chicken breasts, butter flied and halved
  4. salt and pepper
  5. 1-teaspoon paprika
  6. 1-tablespoon olive oil
  7. 12-ounce fresh spinach
  8. 4 garlic cloves, chopped
  9. 1/3 cup half and half
  10. ½ cup mozzarella cheese, shredded
  11. 6 oz mushrooms, sliced
  12. 1-teaspoon nutmeg, grated
  13. ½ cup Monterey Jack Cheese, shredded
  1. Preheat the oven to 375 F.
  2. Generously season chicken breasts on both sides with salt, pepper and paprika.
  3. Cook bacon in large ovenproof pan (preferably cast-iron) until crispy. Transfer bacon to paper towel-lined plate and chop bacon when cool. Keep approximately ½ tablespoon of the bacon grease in the pan and discard the rest.
  4. In the same pan on medium-high heat, add 1 tablespoon of butter and sear chicken on both sides 3-4 minutes per side. Transfer pan with chicken to oven and continue to cook for approximately 15 minutes.
  5. In a separate pan, add 1 tablespoon of butter and 1 teaspoon of olive oil. Sautee half of the garlic 30-40 seconds (making sure garlic does not burn.) Add the sliced mushrooms. Cook 3-4 minutes until caramelized. Do not salt mushrooms or they will become soggy and it will prevent the caramelization. Transfer mushrooms to plate.
  6. In same pan, heat 1-tablespoon butter and remaining teaspoon of olive oil on medium heat. Add remaining half of garlic and the spinach and cook for 2-3 minutes, until spinach starts to wilt. Add half and half and bring to boil. Stir in shredded mozzarella cheese and keep stirring, on high heat, until mozzarella cheese starts to melt (approximately 20- 30 seconds). Reduce heat to simmer until you have smooth creamed spinach (approximately 1-2 minutes). Season with nutmeg, salt and pepper to taste.
  7. As soon as chicken is ready, add creamy spinach, mushrooms and bacon on top of the chicken, sprinkle Monterey Jack Cheese and broil 2-3 minutes until golden. And bubbly. Enjoy!
